Bringing his ABC trilogy to Dumbo, chef Jean-Georges Vongerichten is reportedly opening an enormous, sprawling restaurant of approximately 300 seats which will be located at 55 Water Street, at Dock Street. The location also houses Cecconi’s—a restaurant that began in Venice and ultimately expanded to include locations in Miami Beach, West Hollywood, Mayfair, Berlin, Istanbul, and Barcelona—and Time Out Market, which opened in Dumbo with 21 local vendors, adding a whole new layer of dining options to the Brooklyn waterfront in May 2019.
Head of Jean-Georges management, Lois Freedman, reportedly verified that the restaurant is presently working on the design phase of the operation. Freedman has assured that construction will begin this season, shortly after all design-phase plans are finalized.
The mixed concept of the ABC trilogy started out with the restaurant, Flatiron. The idea is a three-in-one restaurant that originally opened last month in London at the Emory Hotel in Knightsbridge. The ABC trilogy concept is the same as the Flatiron structure, however, Jean-Georges is merging seasonal ABC kitchen, Latin-leaning ABC Cocina, and vegetarian AbcV.
Aside from 13 locations that are currently peppered around Manhattan and bearing chef Jean-Georges’s namesake, such as Nougatine, JoJo, Perry St. The Mark, and The Fulton, the Dumbo spot is the chef’s first Brooklyn location. Of course, chef Jean-Georges also has restaurants in Bridgehampton; Greenwich, Connecticut; and Pound Ridge, New York.
The exciting news of the ABC trilogy to Dumbo comes at the same time as the announcement of a new private restaurant, caviar bar, and lounge, Club Margaux, set to take over his former 18,000 square foot Spice Market. The chef’s former location closed in 2016.
Before the opening of the restaurant in London, Jean-Georges Vongerichten has been leading the way through the restaurant industry with grand concepts such as those in New York, including his sleek Four Twenty Five. As a tasting option with an a la carte menu, Jean-Georges Four Twenty Five opened in December at 425 Park Avenue, at East 56th Street. The location is a two-story restaurant that draws inspiration from the aesthetic of sibling restaurants, The Mark, and urbane minimalist, Nougatine.
Four Twenty Five has essentially become a midtown power dining spot, but before that, Jean-Georges spearheaded his impressive concepts at the Tin Building in 2022. The Tin Building is the chefs’ food hall that opened at what had formerly been the Fulton Street Fish Market.
Adding to Jean-George’s growing legacy, a 2019 New York Times profile reported that his vast restaurant group employs a total of 5,000 people across 12 different countries. And now, the news of bringing Jean-Georges ABC trilogy to Dumbo combines with other projects to point towards even more skyrocketing growth for his restaurant group.
The massive new restaurant is currently being designed and further news will be provided, depending on any additional developments. Nevertheless, chef Jean-George’s innovative location in Brooklyn is set to become a favorite among the many passionate food enthusiasts and connoisseurs suited to appreciate his incredible talents.
